I tackled homemade mozzarella today for probably the fourth time. The first few times I made it, I always ended up with little bits of curd and never with the soft, stringy goodness we’re used to. This time, I followed a recipe off of Instructables. I didn’t quite get the "clean break" I was looking for, but ended up with some sort of cheese at the end–it was somewhere between a mozzarella and a brie, and far, far too salty. (I’ll have to drastically cut down on the salt used in the brine next time.) If you’re up for an interesting challenge and have a few hours to kill, give it a shot. It’s relatively inexpensive, and at the very least is a unique look into the simplest way a cheese can be made.
