One of mine and Kat’s favorite types of tea is chocolate chai, so when Kat found a recipe online for chococlate chai cupcakes, we decided to make them. Not having any buttermilk or wanting to go out and buy it, I did what I’ve always been taught to do: add a tiny bit of white vinegar to milk and let sit for 10 minutes, and you have buttermilk! After going through the rest of the steps and baking however, we found our cupcakes didn’t exactly turn out. In fact, they were more like cakecups–completely fallen in on themselves. (Our guess is that the vinegar didn’t react well with the baking soda in the recipe.) Still, we added on a bit of buttercream frosting and tried them. Despite being less than presentable, they were still delicious.
